Ingredients
- 1 medium onion, chopped
- 3 cloves garlic, crushed
- 1/3 c barley
- 1 tbsp olive oil
- 2 qt chicken broth
- 1 c lentils
- 2 boneless chicken breasts
- 15 oz red kidney beans (canned or precooked)
- 1 c salsa (optional)
Directions
Sautee onion, garlic, and barley in the olive oil until onions start to turn clear. Add broth, lentils, and chicken, and simmer for 30 minutes.
Remove chicken and shred, then return to pot. Add beans and salsa if desired. Simmer another 5-10 minutes.
