Indian-Spiced Seared and Steamed Green Beans

Ingredients
- 2 TABLESPOONS NEUTRAL OIL OR COCONUT OIL
- 1 POUND GREEN BEANS, TRIMMED AND HALVED
- KOSHER SALT AND GROUND BLACK PEPPER
- ¼ CUP UNSWEETENED SHREDDED COCONUT, FINELY CHOPPED (SEE NOTE)
- 1 TABLESPOON POPPY SEEDS
- ½ TEASPOON GROUND CARDAMOM
- 1 FRESNO CHILI OR SERRANO CHILI, STEMMED, HALVED AND THINLY SLICED
- JUICE OF ½ LEMON
Directions
01 In a large skillet, heat the oil until barely smoking. Add the beans and a pinch each of salt and pepper. Cook, stirring only a few times, until charred. Stir in the coconut, poppy seeds and cardamom. Add 3 tablespoons water, then immediately cover. Reduce to low and cook, stirring just once or twice, until crisp-tender. Off heat, stir in the chili and lemon juice, then season with salt and pepper.
