Ingredients
- 1 cup smooth organic peanut butter
- 1/4 cup rice vinegar
- 2-3 tbsp soy sauce
- 1/2tsp garlic powder
- 1tbsp smoked paprika
- 1/2tbsp sharp paprika
- 1/4tsp cayenne or peri peri
- chives if you want 'em
- scallions if you got 'em
- 1-1 1/2 cups water
Directions
Add all the ingredients except the water to a small saucepan over low to low-medium heat.
Add the water in increments, whisking slowly to combine. The sauce will loosen and change color before reaching the correct loose consistency.
Once you have the sauce to a good consistency, reduce heat to low. Taste and adjust any of the ingredients as desired.
Notes
Ingredient amounts are highly malleable. Adjust as you go along to get the flavor profile you want. Specifically, striking a balance between the rice vinegar and the soy sauce is key.
You can substitute coconut aminos for the soy, but may need to balance the extra sweetness.
You can substitute gochujang for the cayenne and sharp paprika. This works well if you are using coconut aminos (the extra umami cuts the sweetness).
You can keep the sauce simmering on low while you prep the rest of your meal. If it thickens up, simply add a little water and whisk to bring it back to a looser consistency.
